Your Natural Gas Stove Is Fueling Climate Change and Harming Your Health — And It’s Worse Than Scientists Think

For those of us who love to cook with natural gas, there’s a word of warning from scientists at Stanford University.

You may have heard that natural gas stoves produce carbon dioxide by burning natural gas as fuel. It makes sense.

However, natural gas stoves also leak unburnt methane into the air, a greenhouse gas 86 times more potent than carbon dioxide (CO2) over a 20-year period. The researchers found that this leak has a climate impact equivalent to the carbon dioxide emissions from half a million cars.

Methane leaks in the home contribute to one-third more warming than the carbon dioxide produced by combustion during cooking. Gas stoves can also expose users to respiratory pathogens such as nitrogen oxides (NOx).

Food chemistry is a great hobby if you’re not reassured. The nitrogen oxides and nitric acid produced by a gas flame are nothing compared to what happens to the food in the pot. Frying is particularly annoying – deep frying over high heat, and possibly pan frying, creates dioxane and acrylamideand a host of other chemicals.

Of course, if you think about all of this too much, worry is more likely to kill you than any real poison in your food. Stress is bad for your heart.
