How did you develop this chocolate chip cookie recipe?

For this recipe, I wanted to create the same delicious taste as my double chocolate chip cookies, but in pan form. Notably, almost all of the cookie recipes work great in pan form, as they can crunch at the edges while still drooling in the middle!

When it comes to chocolate desserts, I like to add vanilla extract and espresso powder. Both work to enhance the flavor of the chocolate, giving it a lovely richness and depth.

What makes this recipe your goal?

This double chocolate chip cookie is easy to make, pretty easy to make (you don’t have to measure exactly like, say, french macarons), and who doesn’t love chocolate?! One thing I like about this recipe is that you can mix everything together in one bowl. In my opinion, that’s the best type of grill.

Are there any kitchen tools available to help bakers perfect this recipe?

Yes, I always make my cookies in KitchenAid . stand mixer. Fun fact, my KitchenAid was my first big purchase for my blog in 2011. It’s definitely something you save on, but it’s every baker’s dream device and will last. in for many decades.

What are your must-have kitchen tools?

I love my trust Staub Fry Pan. It’s perfect for pan biscuits, but also for burgers, game day dipping sauces, pan-fried chicken and pancakes. I will also consider a silicone spoon a must-have for any baker, as well as a good set of measuring cups (this has a very nice acacia wood handle!).

What standout ingredients make this recipe so special?

While I don’t feel like you need to eat something like sugar, I do find that high-quality cocoa powder makes all the difference in my chocolate recipes. I have to go Rodelle Gourmet Baking Cocoa. It has a higher fat content and a really rich flavor. I have never found another cocoa powder that comes close!

To make these cookies gluten-free, you can swap out all-purpose flour for a gluten-free 1:1 baking powder, such as Bob’s Red Mill Gluten-Free 1-on-1 Cake Flour.

What baking tips do you have that we should all know?

In general, I never trust the baking times of recipes because everyone’s oven is different. As a general rule, regardless of the recipe’s baking time, set your timer to 20% less time. To check doneness, insert a knife into the center of the oven. If it’s clean or almost clean, you’re done!

What do you love most about creating recipes that people will make in their own kitchens?

For me, the best part of recipe development is hearing stories about when other people made your recipes. Our cakes made it to someone’s graduation party, our best chocolate chip cookies are someone’s perfect late-night snack and our macaroons are the action. The perfect weekend for a mom and her sugar-loving kids. It feels great to know that what you create brings just a little bit of happiness to someone else’s day.
