I’m actually not a huge fan of big savory breakfasts, but when I have a craving, these breakfast tacos are the best. Why? Because everyone in our house can customize them to their heart’s content!

One of the most popular savory breakfast options I’ve ever shared is this incredible Chorizo Burrito Mexican Breakfast Casserole recipe. It’s so easy and bursting with bright flavors, always a hit.

However, these breakfast tacos are just as easy and so much easier to customize! They work beautifully if you’re serving vegetarians, or people avoiding gluten or dairy. When everyone can add their favorite toppings, you can’t go wrong.

Start with scrambled eggs, and load them up with meat, potatoes, veggies, and tacos toppings galore. You can’t go wrong, I promise. And if breakfast tacos are wrong, I don’t want to be right.

Breakfast Taco Ingredients and Substitutions

  • Eggs – Size large are what we tend to have on hand.
  • Salt and pepper – to taste
  • Corn tortillas – Or flour – your call!

OPTIONAL

  • Avocado – sliced or diced
  • Cotija cheese – Or used shredded cheddar or colby jack.
  • Pico de gallo – Or go for a vibrant salsa.
  • Green onions – diced
  • Cilantro – fresh, chopped
  • Potatoes – Cooked, diced. You can even add hash browns or tater tots!
  • Meats – Add even more protein with bacon, sausage, chorizo
