When it comes to Australian food, Bill Granger is considered a symbol. His restaurant is famous for their group dining style (he was one of the first to create a space that encourages strangers to sit at the table together) and simple, leggy cooking style. real. I will never forget the first time I ate there Darlinghurst restaurant. I was probably about 10 years old when my uncle took me out for breakfast. We ordered soft boiled eggs and “soldier” toast and it was the best I have ever had. The restaurant also has a great vibe. Over the years, Granger has been crowned ‘Sydney’s egg master’ (New York Times 2002), ‘king of breakfast’ (Telegraph Magazine, 2016), and ‘creator of avocado toast.’ Now, it’s always my first stop whenever I’m back in Sydney.
So, of course, when I saw Mr. Granger had released his latest cookbook, Australian Food I knew I had to step in. The cover alone was enough for me to buy tome (a sunny addition to my coffee table) but the recipes are on another level — fresh flavors with local and seasonal focus, healthy but never preach. In honor of the launch, we’re featuring a few recipes from his latest title with the first being the delicious Baked Green Eggs with Grilled Tomatoes & Salsa Peppers.
Granger calls these baked eggs “an organized entertainer’s dream.” He added: “I always thought I was going to be an ‘organized entertainer’ but I could never be. If there’s a chance I’m getting organized, I’ll get overzealous and add something else to the equation, causing chaos. What you need here is a baking tray with lots of little baking dishes.
