Biscuits and Gravy – A Beautiful Mess
If you are looking for a really quick and easy breakfast possible for a larger group, you should try this cookie and casserole recipe.
This casserole requires only six ingredients and about 45 minutes to make from start to finish. You can also make most recipes the night before and then bake the morning you plan to serve this dish.
The ingredients for this cheese and gravy casserole are:
- Canned biscuits – I like Classic Buttermilk Grandsbut any canned biscuit will work just fine.
- Breakfast sausage – I use shredded vegetarian sausagebut you can also use pork or turkey sausage.
- Egg + Milk – for scrambled egg effect.
- Cheese – shredded cheddar is my favorite, but other cheeses like pepper can also work.
- Gravy – I use canned gravy, but you can use a mix or make your own if you’d like.
Can you make cookies and gravy the night before?
It’s correct. Simply make the recipe to the point where you pour the gravy. Cover the whole dish in aluminum foil or cling film and store (and the gravy alone) in the refrigerator overnight.
In the morning, all you need to do is pour the gravy on top and grill.

Cut the biscuits (raw) into quarters and spread on the bottom of a 9×13 stew pan.

Cook the sausage crumbs and spread them over the biscuits.

Sprinkle grated cheddar cheese on top.

In a small bowl, whisk eggs and milk together. Spread the cheese layer evenly over the casserole as possible.

Pour gravy on top.

Bake at 350°F for 30-35 minutes until bubbly and any visible biscuits are golden brown.

Sprinkle scallions on top before serving if using.
You can make this casserole the night before by working the recipe until you’ve poured the gravy over. Cover the casserole and put it in the refrigerator overnight. In the morning, pour the gravy on top and then grill as directed.
I use the vegetable sausage crumb, but if you’re using meat like pork or turkey, make sure the sausage is cooked through before adding it to the casserole. This can change the amount of time it takes to prepare this dish.
