Look, there comes a time in everyone’s life when they find themselves becoming a real adult. It often happens without warning: One day you close a bar at sunrise, the next day you swap tips with your best friend on ideal ways to keep the dishwasher clean. Yours is always clean.
My personal reckoning comes when I find myself unable to stop praising the silicone baking mats. I cannot recommend them enough, and with that, I accept that I am no longer at my peak.

When you start using silicone baking mats, you will wonder how you can cook without them.

So what’s so great about these fragile little things? I’d say their biggest benefit is that they make single-use tin foil and parchment almost useless. Before these mats, I used to tear off a new piece of aluminum foil every time I put something in the oven. From leftover pizza to undercooked salmon to cookie dough to vegetables soaked in olive oil, every food gets a fresh sheet of foil to separate them from the baking tray.
While I’m sure baking sheets must be cleaned regularly, this isn’t a sure thing in my household. Our sheets were full of burn marks and sometimes had oily residue even after cleaning in the dishwasher. Cooking with the silicone baking mat, which is — praises the strength — is dishwasher safe, gives me confidence that whatever food I’m working on won’t be contaminated by what’s left on the mat. . I can also be sure that the mats will keep the baking sheet from getting dirty.
The silicone sheets can withstand oven temperatures of up to 500 degrees F and are also freezer safe. They are really non-stick and extremely easy to clean. I haven’t tried this move yet, but some reviewers say they use sheets to line the fridge—they’ll definitely stay in place—to keep things clean.
Buying something new is rarely the best option when it comes to practicing sustainability. But I believe these are worth buying as they significantly cut down on the need for disposable pads.
As I mentioned earlier, I’ve had my watch for two years now and I see them last for many more years. One way to make sure they last is to avoid cutting directly on top of them, as a sharp knife can cut into the silicone and end up tearing a hole.
While throwing away foil is hardly our biggest environmental offense in the kitchen (and in fact, recyclable aluminum foil in many cities if you get it right), these reusable sheets are a win in our book when it comes to making small changes to cut waste.
