It’s not new, but the Royal Kummelweck beef sandwich has become such a staple on Royal Caribbean cruises that it’s become a hot topic on YouTube, TikTok, and Facebook. Many passengers are so eager to try it that it’s one of the first things they eat on the day of boarding.
Royal Caribbean introduced this sandwich in 2009 when the product line was launched with a groundbreaking Oasis Class debuted on Oasis of the Seas. Fifteen years and several ships later, this delicious snack is now available fleetwide and continues to be a guest favorite.

What is the Royal Kummelweck Cruise on Royal Caribbean Cruises?
The Royal Kummelweck is Royal Caribbean’s beef on a kummelweck bun. Readers familiar with the Buffalo area of New York know that it stands for beef on a kummelweck bun.
“It’s a long word and not easy to understand,” Fritz Halbedl, food and beverage quality assurance consultant for Royal Caribbean, said in a YouTube video the company produced to highlight the sandwich. “‘Kummel’ is short for caraway, and ‘weck’ is roll. It’s a cross between a European and an American roll, meaning it’s flaky on the inside and crispy on the outside.”
What is the recipe for Royal Kummelweck?
The Royal Kummelweck recipe starts with rolls sprinkled with caraway seeds and salt. Inside are thinly sliced beef, usually rare, covered with a sauce and your choice of horseradish, mustard, or both. (I chose both and have no regrets.) When the ingredients come together, the flavors are amazing.
Royal Caribbean specifically uses New York strip loin, which chefs season with Royal Caribbean’s signature (and secret) spice blend, as well as rosemary and thyme. The beef is then cooked in a special oven for 12 to 14 hours at 250 degrees before appearing at the cutting stations.

I recently tried a sandwich for the first time while I was on the train. Utopia of the sea and found myself in need of a quick lunch. I don’t normally like red meat, but I threw in all the sauces and found the experience incredibly delicious and delightfully messy.
A chef at the ship’s Park Cafe, found in tree-lined Central Park area on the Oasis class and Icon class shiptold me he estimates serving about 100 sandwiches a day. After my experience, I’m surprised that number isn’t higher.
