Many people are take a break from alcohol this month, a cultural moment known as Dry January. However, outside of trends spurred by New Year’s resolutions, de-alcoholic beverages have been enjoying a boom. Beverage brands and discerning bartenders are concocting complex pure beers and cocktails in an attempt to tantalize the palates of the sober, temporary drinkers and generally non-alcoholics. likes wine. But how do they actually create these drinks? And how do they meet our cultural expectations of “drinking”?
